Healthy cookies again?! Ok, I promise I will make some good old fashioned chocolate chip cookies soon too. ;) In the mean time, I have made these. They sound outlandish, but they are awesome!! It is pretty simple to make too.
Let's get started!
Here's what you need:
1 cup flour
1/2 cup ground flaxseed
1 cup unsweetened applesauce
1 avocado
1 tablespoon brown sugar
1/4 cup coconut oil
1/2 cup semisweet chocolate chips
1 cup spinach
What to do:
1. First, chop up the spinach into small pieces.
2. Then, add the spinach to the avocado and mash it up.
3. In a large bowl, mix the dry ingredients such as the flour, flaxseed, brown sugar, salt, and chocolate chips.
4. Next, add the mashed up avocado and spinach and unsweetened applesauce to the dry ingredients. Mix well.
5. Microwave 1/4 cup of coconut oil for 30 seconds, and then add it to the bowl. Mix well.
6. Preheat oven to 350F degrees.
7. On a lightly greased cookie sheet, scoop small balls of dough onto it.
8. Bake for about 15-18 minutes.
9. Cool and enjoy! :)
