Pumpkin Muffins


I love baking with pumpkin, so I made pumpkin muffins! Yum! ;) They are allergy friendly too! :)

Here's what you need:

1 cup rice flour
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 cup pumpkin puree
1/2 cup unsweetened applesauce
1/2 banana (mashed up)
1/2 cup vegetable oil
2 teaspoons pumpkin spice
1 teaspoon cinnamon
2 eggs
1/3 cup brown sugar



What to do:

1. In a large bowl, whisk together the eggs, brown sugar, vanilla, applesauce, mashed banana, pumpkin puree, and vegetable oil. Set aside. 

2. In another bowl, mix the rice flour, salt, baking soda, cinnamon, and pumpkin spice together. 

3. Combine both bowls together and mix well. 

4. Preheat oven to 350F degrees. 

5. In a muffin pan, place muffin cups or grease the pan.

6. Pour the mixture into the pan.

7. Bake for about 25 to 28 minutes. 

8. Cool and enjoy! :)

9. I added maple syrup frosting on them afterwards too!

Maple syrup frosting:

Here's what you need:

2 cups sugar
1/3 cup pure maple syrup
3 tablespoons of butter 

What to do:

1. Heat the butter in the microwave for about 15 seconds.

2. Then, using a mixer,  mix the butter, sugar, and maple syrup together until smooth.

3. Spread onto cupcakes or a cake or anything else you'd like!
