Pumpkin Pie Pudding!


Pumpkin pie pudding!!! I can't even begin to tell you how awesome this stuff is!! It is so easy to make and takes very little time! :) It's even allergy friendly too for my son who is allergic to both peanuts and tree nuts. 


Here's what you need:

1/3 cup rice flour
2 cups milk
1 teaspoon vanilla
1 teaspoon salt
1/2 cup brown sugar
1 teaspoon cinnamon
2 eggs
2 teaspoons pumpkin spice
1 cup of pumpkin puree


What to do: 

1. First, whisk the eggs in a large bowl and set aside. 

2.  Mix the rice flour, milk, brown sugar, and vanilla in a medium sized saucepan. Cook over medium heat until boiling. Boil for about 2 minutes or until thick.

3. After boiling, turn off the burner. Add the eggs. Cook over medium heat for about 10 minutes. 

4. Now, add the pumpkin puree,  pumpkin spice, cinnamon, and salt. Mix well. 

5. Cool and enjoy! :)
