Rainbow cookies!

Yes. Rainbow cookies. It was a little challenging but totally worth it!!


Here is what you need:
1 cup (2 sticks) of butter
1 cup of sugar
1 egg
1 teaspoon vanilla
2 teaspoons baking powder
2 3/4 cup flour
Food coloring



How to make these awesome cookies:
1. First, using a mixer, cream the butter and sugar. (Note: If the butter is softer, it works better.)
2. In a separate bowl, mix the flour and baking powder together.
3. Add the egg and vanilla to the butter and sugar mixture..
4. Slowly pour in the dry mixture while blending each time until completely mixed.
5. Roll the dough into 6 balls having them decrease in size large to small.
6. Place one ball of dough in a mixing bowl at a time, add 8-10 drops of food coloring, and blend with a mixer. (Note: To avoid dying your hair several colors, wear rubber gloves.)

Note: You should end up with red, orange, yellow, green, blue, and purple. To make orange, use 10 drops of yellow and 8 drops of red. To make purple, use 8 drops of blue and 10 drops of red.
7. Roll each color dough back into a ball, wrap with saran wrap, and refrigerate for 2-3 hours to let color absorb into the dough.
8. After 2-3 hours, take the dough out, and let it sit for about 20 minutes.

9. Put a little bit of flour on the counter, and using a rolling pin, roll out and flatten the dough.
10. Roll the purple dough into a "hot dog" or "snake", and place in a separate spot.

11. Next, fold each color layer over another until all 6 are on top of another.

12. Preheat oven to 350F degrees.
13. Using a knife, slice the dough, and place onto a greased cookie sheet.

14. Bake for 15-20 minutes depending on the texture you want.
15. Cool and enjoy!!!



Note: Depending on how thick you want the cookies, this recipe should make anywhere from 15-25 cookies.
